Feels strange to celebrate during a pandemic, but this past Sunday was our seven year wedding anniversary 👨‍❤️‍👨 (and twelve illegal years). We wanted it to feel a little special so we decided to cook our own five course dinner, with wine pairings, natch. It lasted four hours because we had to cook then eat then cook then eat then cook then eat, but, obviously, we had the time! The menu was... 1st course: Grapefruit, sweet onion, celeriac root and beet green salad with honey, parsley, and white balsamic dressing; paired with a mango and peach Bellini. 2nd course: Seared colossal sea scallops marinated in lemon, garlic, and orange peel with a cilantro clementine vinaigrette on mashed cauliflower with roasted garlic, butter and vanilla pepper; paired with a Sauvion Rosé d'Anjou. 3rd course: Creamy polenta with oak-aged white cheddar, broiled thick-cut Genoa salami and Modena balsamic reduction; paired with Santa Christina Tuscan chianti. 4th course: Panfried petite pork steaks with an apple pie spiced sweet onion and honeycrisp chutney, with a golden beet salad with sultanas, pistachio and shaved parmesan; paired with an Argyle pinot noir (Willamette Valley). 5th course: Marbled dark chocolate Italian mousse with chopped hazelnuts and sour cherry jam; paired with a Filthy cherry and prosecco cordial and Faldón Columbian espresso lattes.
